You can't be sad when you're holding a cupcake

And as promised, here is my Cupcake post. 
I like baking. I find it quite therapeutic to be honest. It sort of keeps my mind occupied and helps me forget things for the while. Just how when reading a book you dive into a world and it's as if you are living that world, with baking, it does the same for me. I sort of go into my own world, my own thoughts, and well, it helps keep me sane and calm. But don't get me wrong, just because i enjoy baking doesn't mean I'm actually any good at it. 

I see many people who have successful Cupcake businesses, even a close friend of mine who also has a business; when I compare my Cakes to theirs, mine is like an insect stood next to a beast. LOL. What kind of a metaphor was that? I think David from Steelheart and Firefight is rubbing off on me. Oopsies. 


Taadaaa, my plain and simple Cupcakes. I took them into my evening classes to share out with the rest of the students. I actually really wanted to eat one, but when I went back, that entire tray and whole other one, was gone. I was shocked. The fact that people actually liked them had me surprised. 

So anyway, would you like the recipe? Yes, no? Well tough, cos I'm giving it anyway :P 

Cupcake recipe 
(Makes around 20-30 depending on the case size)
8oz Butter
8oz Caster Sugar
8oz Self Raising Flour
4 eggs
1 teaspoon Vanilla Essence
1 teaspoon Milk

  1. Beat the butter and sugar together till it is light and fluffy
  2. Then one by one add in the eggs and keep on mixing
  3. Sift and fold in the Self Raising Flour along with the Vanilla Essence and Milk
  4. Bake in the oven at 180 for about 15-20 minutes (Some ovens vary and may take longer)

Buttercream Icing
5oz Butter
10oz Icing Sugar
A drop of vanilla essence
A drop of milk

  1. Beat the butter till nice and soft
  2. Slowly sift in Icing Sugar and keep on mixing till it makes a smooth enough texture
  3. Add the vanilla essence and milk and mix again
To decorate I used the Asda brand Piping bags and the Wilton 2D nozzle. I placed the icing into the piping bag, and starting from the middle of the cupcake and gradually squeezed out the icing in circular motions until it created the somewhat of a rose shape. (I have no idea if that even made sense).

And there it is, my somewhat knowledge of baking cupcakes. Feel free to use the recipe, it in no way belongs to me.
